Healthy Creamy Chicken Pasta Salad

Ingredients
  

  • 2 cups cooked pasta whole wheat preferred
  • 1 ½ cups cooked chicken breast diced
  • 1 cup cherry tomatoes halved
  • 1 cucumber chopped
  • ¼ red onion finely sliced
  • ¾ cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove minced
  • Salt and pepper to taste
  • 2 tbsp fresh parsley or dill

Method
 

  1. Cook pasta according to package directions, then drain and cool
  2. Cook chicken and cut into bite-sized pieces
  3. In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper
  4. In a large bowl, combine pasta, chicken, and vegetables
  5. Pour dressing over and mix until evenly coated
  6. Chill for 30 minutes before serving
